Gerry Wilton's Hand Made Belgian Truffles....A Must See!!!!...
Every year we say we are going to try and make some Chocolate Truffles but never get around to it. Hopefully this year we are going to try and make some because they don't look as hard as I thought they would be!!
Won't be trying everything on this video though!!! well hopefully not!!.....
This is so funny I will never be able to make these without worrying what to do with with the spare chocolate!!

You will need:
- 900g Belgian couverture or high quality chocolate broken into small pieces (white, dark or milk)
- 286g of whipping cream
To decorate:
- Cocoa powder
- Icing sugar and flour ( 50/50 mixed)
- Nibbed almonds roasted
- Coconut pieces
Method:
- Firstly pour your chocolate pieces into the bowl and put in the microwave until melted.
- Open the cream and pour it all into a bowl.
- Next using the empty cream container, pour two containers full of liquid chocolate onto the cream.
- Using the spatula start to mix the two together.
- Now spoon the mixture into your piping bag; begin piping long even logs of chocolate.
- Make sure you use all the chocolate.
- Cut the logs into even pieces approximately 3cms long.
- Take each piece and mould it into a round shape and then place between the palms of your hand and roll very quickly for 5 seconds to perfect the shape.
- (Remember that these are hand made chocolates and do not have to be perfect!!)
- Do this to all the pieces of chocolate that you have.
- Melt more chocolate to 32degrees and dip the rolled truffle into the melted chocolate and then into one of the toppings, being sure to cover each one completely.
- When set remove and eat.
