Pineapple Yogurt Meringue..

Serves 3-4
Bitter and sweet all rolled into one.

Ingredients:
  • 500g Pot of Natural yoghurt
  • 200g Fresh pineapple
  • 50g Lemon curd
  • 6 Ready made mini meringues


Method: 
  1. Core, peel and chop some pineapple.
  2. In a food processor mix the chopped pineapple for a few seconds.
  3. Add the lemon curd and yogurt.
  4. Mix for a few seconds until all blended in.
  5. Pour into glasses.
  6. Crush the meringues.
  7. Sprinkle on to of the yoghurt.
Mix and serve straight away.
