Summer Holidays & Campfire Cooking...


Not long left at school now before the big six weeks holiday. It is now time to think about planning days out and fun meals in the garden.

I was so fed up with all that rain we had last week, it stopped us enjoying eating outside ( I must buy a canopy very soon!!) but luckily the weather turned beautiful again over the weekend and we have been dining out in style again.

This week we have teamed up with Simply Hike to share one of our favourite things to do every day throughout the Summer. That will be eating outside in the Sunshine then! As long as it sunny, that is!!


We love to eat outside. A morning cup of coffee here, a sandwich at lunch time there but my favourite time of the day is at dinner time when we are all home together and share some yummy food, talk nonsense and share some laughter together.

My Husband is always asking me to go camping, it is something I have always fancied doing but I would not know where to start. How much would you need to buy? just to start. I am guessing the first place to start would be to buy a tent! We love the outdoors and making food outside is a nice change.


So this Sunday we planned a BBQ and had our dinner outside. I have not cleaned our old BBQ up yet. So the trusty throwaway ones I bought came in handy. Perfect if you're going out on a picnic for the day or going camping and do not want to take a big BBQ with you too.


For our dinner, we cooked up some burgers, chopped up some tasty salad and made some home made chicken kebabs. They were so tasty. My son who is home from University suggested I try Cajun seasoning, it was not something I have ever tried before. Wow so glad I did, it has a lovely taste to it.


The BBQ  went down well, no leftovers. The dog was disappointed!!.  A lovely fun evening in the sunshine with family. What's not to like?!


Now we have the children enjoying eating out in in the garden again, I think it is time to clean our old BBQ up. Any volunteers kids?  Perfect for cooking some bacon for breakfast, sausage for lunch and kebabs for dinner.

Chicken and vegetable skewers:

Ingredients:

  • 590g Chicken breast fillets ( I cut into about 42-44 pieces)
  • 1 Tbsp olive oil
  • 1 and a half tablespoons of Cajun
  • Sprinkle with sea salt
  • Sprinkle with ground pepper

Vegetables for the skewers:

  • 250 g Cherry tomatoes (around 24)
  • 1 Large yellow pepper (cut into around 24 cubes) 
  • 2 Medium onions (24 cut into cubes)
  • 1 Tablespoon of olive oil

Mixed Salad To Serve:

  • Makeup as much or as little mixed salad as you would like. I used: lettuce, tomatoes, onions, spring onions, cucumber red and green peppers.


How To Make Chicken Kebabs:

Makes around 14 kebabs sticks:

Step One:

Cut the chicken up into small cubed size pieces, place them into a bowl that you use for raw meats.

Sprinkle with the olive oil, about 1 and a half tablespoons of Cajun spices, a sprinkle of salt and pepper. Mix well. Cover and leave a few hours to marinate in the fridge.

Step Two:

Wash the cherry tomatoes, chop the yellow pepper into chunks, peel and chop the onions into chuck size pieces and pop into a salad container, place into the fridge for later.

Step Three:

Pop your chicken and veg onto each skewer whilst you are waiting for the BBQ to warm up. I tried to add 3 pieces of chicken and about 5 different pieces of veg onto each in a random order. Place on the hot BBQ for 10 to 20 minutes, depending on how good your BBQ is. These disposable ones took a long time, around 20 minutes but a proper one would only take about 12 ish minutes. Check the chicken is well cooked before serving.

Serve straight away with your favourite BBQ food and sides.

They taste great, yummy!!


As a bit of fun, we made up some fruit kebabs and melted some chocolate on the BBQ.

I suggest you eat the fruit kebabs raw and just add the melted chocolate to them or quickly hold the marshmallows over the flame for a few seconds to cook them if you wish. I popped some on the BBQ whilst I got my camera and burnt the marshmallows!!


I learnt my lesson for next time.


Fruit Kebabs:

Serves 4

You will need:
  • 2 Bananas ( half a banana for each kebab)
  • 12 Marshmallows (3 for each one)
  • 8 Strawberries (2 for each)
  • 80g Cooking chocolate
  • Sprinkle of Cinamon optional

How to make:
  1. Pop your fruit and marshmallows on kebab sticks in a random order.
  2. Put some cooking chocolate in a little cooking pan. Stir until all melted then remove from heat.
  3. You can lightly toast the marshmallows over a flame for a few seconds if you like or not.
  4. Spoon melted chocolate over them.


I am glad I had a few more strawberries left over for today's breakfast in the garden too. Love relaxing outside in the open air and peace and quiet!
