Crock-Pot Dessert Challenge...

Happy Thursday!

A few weeks ago I was challenged to make my favourite dessert in a Crock-Pot.

A cake in a Crock-Pot I thought!?

I love using my slow cooker. Popping it on in the morning and having dinner ready in the evening. With after-school clubs and Hubby on shifts, it is the perfect way to cover multiple meal times.

Throughout Winter we use it a few times a week. Just yesterday a delicious stew and dumplings, everyone was happy with that!

I have never made many sweet treats in it though. A plain rice pudding when I first got it, that's about it. My culinary creativity though has been piqued with a challenge to make a dessert. Will they taste nice? Easy to make? Look good? Read on!!

The challenge was on and now to whip up my favourite dessert in Crock-Pot.

What to try first!?

I have so many favourite treat recipes!

I was kindly sent a Crock-Pot 4.7L Digital Countdown Slow Cooker to make my dessert in.

How lovely is this!?

I was really impressed with having a proper posh Crock-Pot. {My old was was just a home brand one, not like this though with a proper timer on and everything.} Perfect for knowing exactly how long you want to cook something and not guessing when you put it in.

First up I tried to make chocolate brownies but failed miserably! Mine burned on the outside and were not cooked in the middle. A tweak to the cooking time, heat setting needed.

Next up I made my favourite go-to cookie recipe. Although I did slightly burn the sides due to the cookie rising over the greaseproof paper. Better than the brownies though!!

Slow Cooked Cookie:

What you need:
  • 100g Margarine
  • 75g Soft brown sugar
  • 1 tsp Vanilla extracts
  • 2 tbsp Golden syrup
  • 175g Self-raising flour
  • 100g Chocolate chips
  • 2 tbsp Milk

What to do:
  1. Beat the margarine until soft add the sugar and vanilla essence then mix until all creamed together.
  2. Mix with a spoon the flour, syrup, half the chocolate chips, milk and beat together.
  3. Grease and line the Crock-pot baking tray with grease-proof paper.
  4. Pour your mixture in and flatten down.
  5. Sprinkle the remaining chocolate chips over the top.
  6. Cook on the slow setting for about 2 and a half hours.

Tips I learnt from Baking cakes and cookies in a slow cooker:
  1. Don't try to cook a big cake in a slow cooker. By putting too much cake mixture into a slow cooker it is more likely not to cook in the middle.
  2. Make sure you grease the slow cooker well before adding cake mix to it. Either butter or cooking spray.
  3. Use plenty of greaseproof paper as when the cake rises, it may burn on the side of the crock pot walls.
  4. Have fun trying different recipes.

So a few recipes in and I am not having much look. The kids have enjoyed the treats, however I was not happy with how they turned out. Time to get the thinking cap on!!

At the moment I still prefer using my slow cooker to cook mostly savoury meals. Less stress!!

It just goes to show how versatile Crock-pots are though and you can cook almost anything in them. Made me get more creative with my treat recipes for sure.

I was still on a mission to make the perfect dessert in mine, so I thought, what would work better in a slow cooker?

Fruit maybe with a little more liquid in?

How about fruit crumble?

Now your talking!!

Raspberry Fruit Crumble:

You will need:
  • 300g Frozen raspberries
  • 25g Granulated Sugar
  • 150g Plain flour
  • 25g Rolled oats
  • 1 Tsp cinnamon
  • 75g Margarine
  • 50g Brown sugar

Step One:

Place the frozen raspberries in the bottom of the Crock-pot.

Sprinkle the Granulated Sugar over the raspberries.

Step Two:

In a bowl sift the flour, add the oats and cinnamon, and mix in the margarine.

Rub the mixture with your fingertips until it resembles fine breadcrumbs.

Stir in the brown sugar.

Step Three:

Evenly spread the crumble all over the raspberries and sugar until all covered.

Step Four:

Set your Crock-Pot to high, cover and cook for around 2 and a half hours.

Serve with ice cream, custard or cream.

Finally, a recipe that everyone in the family agreed on. Perfectly done in the Crock Pot.

Boom I nailed it, this may get used a lot as a Sunday Dinner treat.

A traditional Sunday Lunch with a Crumble Crock Pot afters.

Result!!
